Hey lovelies, this salmon soup tasted absolutely delicious. The best I’ve had so far lol. You only need a bowl to be filled up. I’m in love :).
This is otherwise known to Africans as pepper soup. They normally serve this in parties or at home. It can also be used as a remedy for cold, fever or any other illness. In Sierra Leone (where I’m from) this is one of the most popular and oil free dish and is loved by many people including myself.
It can be served by itself or with rice, fufu, cassava, potatoes, plantain etc. It can be cooked with meat, chicken or seafood. In my case, I will be serving mine with potatoes and it will be cooked with fish.
1/2 chilli pepper (chopped)
1 tablespoon of vegetable oil.
Sea salt (to taste)
1 table spoon Tonbi/lime
1. Place a sauce pan on a stove on high heat.
2. Add already boiled water from the kettle into the pot, add the potatoes, some sea salt and allow it to cook for 7 minutes or until it’s half cooked: this is because the potato is the hardest thing amongst the ingredients, so you need to give it some time to cook on it’s own before adding anything else, as you don’t want the other ingredients to be over cooked.
3. After the potatoes are medium cooked, add the onions, chilli pepper, seasons and allow it to cook for 5 minutes.
4. Diced the salmon in to big cubes.
5. Add the salmon and the mushroom into the pot and mix it with the rest of the ingredients in the pot.
6. Allow it to cook for about 5 minute turning it over approx every 2.
7. Add a table spoon of Tonbi (also know is tamarind) but it most be the sour 1 and not the sweet one. You can add lemon or lime as an alternative because the main aim here is to give the soup a citrus (sour) taste and allow it to cook for an extra 2 minutes.
8. Taste to make sure everything is cooked. Allow it to cool down for about 3 minute and serve in a nice crystal bowl :).
